fall soup

  • 1 box of chicken or vegetable stock
  • 2 c. water
  • 1 yellow onion
  • 2 carrots
  • 3 cloves garlic
  • 1/2 bulb of fennel
  • 3 tomatoes
  • 1 sweet potato
  • bunch of dino Kale
  • 1 can white kidney beans
  • 2 bay leafs
  • sriracha hot sauce
  • evoo
  • S & P
  • avocado
  • parmaseanProcessed with VSCOcam with c1 preset
  1. chop onion, carrots, and fennel and dice garlic.
  2. sauté in pot with evoo
  3. add stock and water, bay leaf. sriracha and S & P to taste.
  4. bring to boil and cover for 15 min.
  5. turn down to simmer. add diced tomatoes, chopped sweet potato, beans, and kale.
  6. simmer 20ish min.
  7. eat up.
